Jalapeno Popper Stuffed Chicken Recipe

Prepared in the Air Fryer, this is a deliciously creative jalapeno stuffed chicken breast recipe that is packed with bacon and cheese with a hit of Jalapeno.  It’s quick and easy to prepare and, importantly, healthy too!!


Jalapeno Popper Stuffed Chicken Recipe prepared in an Air Fryer

Ingredients for Jalapeno Chicken Recipe

  • 2 slices of bacon, diced and cooked (54g)
  • 55g of reduced-fat cream cheese
  • ¼ cup jalapenos (48g)
  • 150g shredded low-fat tasty cheese
  • 2 boneless, skinless chicken breasts (240g)
  • 250g of rocket
  • 10 cherry tomatoes (125g)
  • ½ cucumber, sliced (100g)

Jalapeno Chicken Recipe Method

  1. In a medium bowl, stir together bacon, cream cheese, jalapenos and 75g of shredded cheese.
  2. Cut 6 slits across the top of the chicken breast. Do not cut all the way through. 
  3. Stuff the cream cheese mixture into the slits.
  4. Place chicken in air fryer basket and cook for 15 minutes at 175 degrees celsius. When there is 1 minute left on the timer, open the air fryer and sprinkle the remaining tasty cheese on top to cook for the last minute. 
  5. Serve with a side of rocket, cucumber and cherry tomatoes.
