Healthy Beef Nachos Recipe
Serves: 1 Prep time: 10 Cook time: 20
120 grams lean beef mince
1 tsp Mexican spice mix (1 grams)
2 tsp tomato passata (10 mls)
2 small corn tortilla (48 grams)
1/4 medium avocado, mashed (30 grams)
1 tbsp Greek natural yoghurt (20 grams)
Healthy Beef Nachos Recipe Method:
Preheat oven to 180C.
Heat a non-stick frying pan over medium-high heat.
Lightly spray with cooking oil spray. Add mince and brown, breaking up any lumps.
Add Mexican spice mix and tomato passata.
Reduce heat to low and simmer for 15-20 minutes until flavours have combined.
Cut tortillas into triangles and place them on a lined baking tray.
Bake in the oven for around 3-5 minutes on each side, until crisp.
Place tortilla chips into a serving bowl and top with mince, mashed avocado and yoghurt to serve.
