Healthy Beef Nachos Recipe
This Mexican inspired healthy Beef Nachos recipe will please the whole family or the boys for Friday fun! Increase quantities to make a big batch to freeze for later.
You can even use an alternate protein like chicken, pork or turkey if beef isn’t your thing. For a vegetarian option switch out the meat for beans like kidney, chickpea or mixed beans.
Healthy Beef Nachos Recipe

Ingredients:
- 120 grams lean beef mince
- 1 tsp Mexican spice mix (1 grams)
- 2 tsp tomato passata (10 mls)
- 2 small corn tortilla (48 grams)
- 1/4 medium avocado, mashed (30 grams)
- 1 tbsp Greek natural yoghurt (20 grams)
Healthy Beef Nachos Recipe Method:
- Preheat oven to 180C.
- Heat a non-stick frying pan over medium-high heat.
- Lightly spray with cooking oil spray. Add mince and brown, breaking up any lumps.
- Add Mexican spice mix and tomato passata.
- Reduce heat to low and simmer for 15-20 minutes until flavours have combined.
- Cut tortillas into triangles and place them on a lined baking tray.
- Bake in the oven for around 3-5 minutes on each side, until crisp.
- Place tortilla chips into a serving bowl and top with mince, mashed avocado and yoghurt to serve.
