Tacos with Mince and Beans
All you need is 20 minutes to make these delicious and healthy Tacos with Mince and Beans for your next Mexican inspired dinner. You can even replace the beef mince with chicken, turkey or another protein if you like.

Tacos with Mince and Beans Recipe

Ingredients:
- Cooking oil spray
- 1/8 brown onion, finely chopped (12.5 grams)
- 1/8 tsp dried chilli flakes (0.1 grams)
- 1/4 tsp ground cumin (0.3 grams)
- 1/2 tsp dried Italian herbs (0.5 grams)
- 1/2 tsp smoked paprika (0.5 grams)
- salt
- 80 grams lean beef mince
- 100 grams tinned tomatoes
- 60 grams tinned red kidney beans
- 2 hard taco shells (20 grams)
- 1/2 cup white cabbage, shredded (25 grams)
- 1/2 medium carrot, grated (35 grams)
- 2 tbsp Greek natural yoghurt (40 grams)
Tacos with Mince and Beans Method:
- Spray a frypan lightly with oil and place over medium heat.
- Cook onion, stirring occasionally for 2-3 minutes until translucent.
- Add chilli flakes, cumin, Italian herbs, paprika, a pinch of salt and the mince, stirring with a wooden spoon, for 5 minutes, until browned.
- Rinse and drain kidney beans and add the tomatoes to the pan.
- Bring to the boil, reduce heat to low and simmer, stirring frequently, for 10 minutes, or until sauce has thickened.
- Heat taco shells according to packet directions.
- Divide mince between taco shells, topping with shredded cabbage, grated carrot and a dollop of yoghurt to serve.
