Steak and Beetroot Salad Recipe

This  Steak and beetroot salad recipe is a superb high protein low carb meal that is tasty and really easy to prepare. It contains a whopping 38.7 grams of protein per serve and is relatively low in calories at just 398.

With just five main ingredients, you can have this beetroot salad a healthy and delicious meal on the table in around 15 minutes.

  • 300 grams
  • lean beef
  • salt
  • pepper
  • 2 tsp extra virgin olive oil
  • 6 tinned baby beetroots
  • 2 cups rocket lettuce
  • 2 tbsp reduced-fat feta, crumbled
  • 2 tsp balsamic vinegar

Steak and Beetroot Salad Recipe Method:

  1. Bring the steak to room temperature before cooking. Season with salt and pepper.
  2. Heat oil in a frypan over medium-high heat and add steak. Cook for 4-5 minutes on each side or until cooked to your liking. Can also be cooked on a preheated barbecue plate. Once the steak is cooked, remove it from heat and set it aside to rest.
  3. Prepare the salad by draining the beetroots and chopping them in half.
  4. Place rocket on a serving bowl and top with beetroot crumbled feta and walnuts. Drizzle with balsamic.
  5. Once the steak has rested, slice and place on top of the salad to serve.
