Chorizo and Egg Scramble Recipe Ingredients:
- 50g chorizo sausage (50g)
- 1 slices wholegrain or gluten-free bread of choice (33g)
- 4 eggs 200g
- 2 cups baby spinach (60g)
- ½ juice of a lemon (20ml)
Chorizo and Egg Scramble Recipe Method:
- Slice the chorizo and add to a frypan over medium-high heat.
- Brown the chorizo slices on both sides (no oil should be required as the chorizo will release some of its fat).
- While chorizo is cooking pop bread down in the toaster.
- Whisk the eggs and add to the pan with spinach and scramble to your liking.
- Spoon eggs onto a plate and serve with lemon on the side to squeeze over everything.
