Healthy and Easy Chicken Laksa Recipe

Ingredients

  • 10 oz chicken breast fillets
  • 2 small head bok choy (5 oz)
  • cooking oil spray
  • 2 tablespoon laksa paste store-bought
  • 2 1/2 cups liquid chicken stock salt reduced
  • 4 tbsp coconut cream

Healthy and Easy Chicken Laksa Recipe Method

  1. Cut chicken into thick strips.
  2. Trim and chop bok choy.
  3. Heat a saucepan over medium-high heat and lightly spray with cooking oil spray.
  4. Add laksa paste and cook for a minute or so, then add the stock. Bring to the boil.
  5. Add chicken and simmer for 5 minutes until cooked through.
  6. Add coconut cream and bok choy. Simmer for a few more minutes to cook the bok choy then serve. Enjoy our Delicious, Healthy and Easy Chicken Laksa Recipe!
